The Firefin Catfish is a large flathead catfish loved by anglers for both its flavour and its fiery fighting spirit. This lends the fish its name, in addition to the orange and yellow fringes along its fins which resemble burning leaves. Grilled Firefin with Zimmer Sauce is a famous Eastern Zaitopian dish. This has led to overfishing in some areas, though the overall population remains stable. Cultured firefin flesh is grown and sold canned to meet the demand, though connoisseurs insist the taste doesn't quite live up to true, wild firefin.
